I would like to introduce you to an absolutely gorgeous triple chocolate cookie recipe. It’s super fudgy but still a nice cookie with big chunks of white and milk chocolate. And it’s soooo easy… give it a go!
60g COLD Butter
45g Light Soft Brown Sugar
55g Caster Sugar
40g Cocoa Powder
1/4 tsp Bicarb of Soda
1/2 tsp Baking Powder
1/4 tsp Salt
50g White Chocolate
50g Milk Chocolate
Cream butter and sugars together until smooth. Add the egg and beat until it’s fully incorporated. Combine all your dry ingredients and give them a good mix.
Add the dry ingredients to the bowl and mix everything until your cookie dough is squidgy, smooth and doesn’t stick. Then add your chocolate chunks (you want to make sure they’re nice and big) and mix them in until they’re evenly distributed.
Put your cookie dough in the fridge to rest for 15-20 minutes.
Preheat your oven to 200 degree C.
After 20 minutes, form 4 cookies out of the dough. They will be about 120g each. Roll them into a ball and then flatten them a bit, not too much, they will spread a tiny bit.
Bake for about 8-9 minutes and keep a close eye on them, they’re easily overcooked.
Leave them to cool on your baking tray for 25 minutes or so and then tuck in!
