Biscoff Rice Krispy Treats

Just in case you haven’t noticed, I quite like Biscoff biscuits. And Biscoff spread. And as it happens I also really like rice krispy treats, so it only seemed natural to put them together and create something beautiful (sounds dramatic but it’s true!). This lovely mixture of flavours is topped with a white chocolate-Biscoff spread mixture and loads more Biscoff biscuits, because… why not!

Recipe:

Rice Krispy Treats:

  • 150g Rice Krispy Cereal
  • 300g Marshmallows
  • 100g Biscoff Spread
  • 80g Biscoff Biscuits
  • Pinch of Salt

Topping:

  • 150g White Chocolate
  • 2 Tbsp Biscoff Spread
  • 80g Biscoff Biscuits

Method:

Grease a 20cm square tin and lay it out with baking paper or parchment.

Melt the marshmallows and the Biscoff spread on a low heat in a large stockpot. Keep stirring to avoid anything from burning into the pot but don’t worry if it sticks a little bit to the bottom of the pot. When it’s nearly completely melted, take it off the heat add the salt and keep stirring until the marshmallow mixture has melted completely. Then add the Rice Krispies and roughly break up the Biscoff biscuits before adding them as well. Now combine everything quickly using a silicone spoon or spatula. The mixture is very sticky and it will take a bit of elbow grease to coat all the Rice Krispies and the biscuits with the marshmallow mixture. When the Rice Krispy mixture is well combined transfer it into the prepared tin and press it down as tightly as possible using a silicone spoon or spatula or the bottom of a glass/measuring cup, making sure that the surface is nice and flat. Let it cool down completely.

Melt the white chocolate in 30 second intervals in the microwave, stirring well in between intervals. When the chocolate has melted completely add the Biscoff spread and stir until they’re well combined.

Take the Rice Krispy treats out of the tin and drizzle half of the white chocolate mixture over the treats, then roughly break up the Biscoff biscuits and scatter them over the top before drizzling the second half of the chocolate mixture over the biscuit layer.

Wait until the chocolate has set and then cut the Rice Krispy treats into 16 equally sized squares!

TIP: If you prefer thinner Rice Krispy treats just use the same quantities in a larger tin!

ANOTHER TIP: When the marshmallows have burned into the bottom of your pan just fill it with soapy water and bring it to the boil. The Rice Krispy mixture should be very easy to remove after!
